In a saucepan, combine sugar, milk, butter, and cocoa powder.
Bring to a boil over medium heat, stirring occasionally. - Boil briefly
Once it reaches a full rolling boil, let it boil for 1 minute (this step is key for the cookies to set properly). - Add flavor & texture
Remove from heat. Stir in vanilla extract, peanut butter, and salt until smooth. - Mix in oats
Add oats and stir until fully coated. - Shape the cookies
Drop spoonfuls of the mixture onto your prepared surface. - Let them set
Allow to cool at room temperature for about 20–30 minutes until firm.

- If cookies turn out too soft, the mixture likely didn’t boil long enough.
- Too dry or crumbly? It boiled too long.
- You can swap peanut butter for almond butter or skip it entirely.
