Transfer the assembled pastries to the lined baking sheet. Brush the tops with the remaining beaten egg for a glossy finish.
Optional: Sprinkle the tops with a little grated Parmesan and chopped parsley or thyme.
Bake in the preheated oven for 20 to 25 minutes, or until puffed and deeply golden brown.

Step 5: Cool and Serve
