1. Build the base
Melt butter in a large pot over medium heat.
Add onion, carrots, and celery—cook 5–7 minutes until softened.
Stir in garlic and cook 1 minute more.
2. Make it creamy
Sprinkle in flour and stir constantly for 1–2 minutes.
Slowly add chicken broth while stirring to avoid lumps.
Bring to a gentle simmer.
3. Add chicken & seasoning
Stir in shredded chicken, salt, pepper, and thyme.
Simmer for 10–15 minutes until slightly thickened.
(Optional: stir in milk or cream for extra richness.)
4. Make dumplings
In a bowl, mix flour, baking powder, and salt.
Add melted butter and milk—stir just until combined (don’t overmix).
5. Cook dumplings
Drop spoonfuls of dough onto the simmering stew.
Cover and cook for 12–15 minutes (do NOT lift the lid while they steam).
