- Prep
Preheat oven to 175°C (350°F). Grease and line a loaf pan. - Cream the base
Beat butter and cream cheese together until smooth and fluffy.
Add sugar and mix until light. - Add eggs & vanilla
Beat in eggs one at a time, then mix in vanilla. - Combine dry ingredients
In another bowl, whisk flour, baking powder, and salt. - Mix together
Gradually add dry ingredients to the wet mixture until just combined. - Fold in cranberries
Gently fold in cranberries (you can lightly coat them in flour first to prevent sinking).
