2. Make the brine
- In a saucepan, combine vinegar, water, honey, salt, and spices
- Bring to a gentle simmer, stirring to dissolve
3. Pack jars
- Place sliced beets into clean glass jars
- Add garlic if using
4. Pour brine
- Pour hot brine over beets until fully covered
5. Cool & refrigerate
- Let cool to room temperature
- Seal and refrigerate at least 24 hours before eating
