2. Make the brine

  • In a saucepan, combine vinegar, water, honey, salt, and spices
  • Bring to a gentle simmer, stirring to dissolve

3. Pack jars

  • Place sliced beets into clean glass jars
  • Add garlic if using

4. Pour brine

  • Pour hot brine over beets until fully covered

5. Cool & refrigerate

  • Let cool to room temperature
  • Seal and refrigerate at least 24 hours before eating
